Paleo Challenge:
Major Mike was asking about wraps the other day, and I mentioned the Paleo Wraps from Julian’s Bakery, which we have found very useful. They are made of coconut, so you need to be a fan. They are expensive but a good substitute. Senor Wiltz had also mentioned trying to make his own almond flour tortillas, so I will be interested to hear how those came out as well.

  • The almond flour tortillas were dead simple and came out ok. They hold together properly which was the big concern. If paired with fruits and dark chocolate it could also be used to make crepes.
    5 eggs
    1/2 cup almond flour

    Whisk together until smooth, scoop 1/2 cup at a time into a hot skillet with olive oil ( or a high heat oil, I used avocado).

    Cook on each side until browned, like pancakes.

    Recipe makes about 4 8-inch tortillas.
