Leftovers are king during a Paleo Challenge, so the Artichoke Lemon Pesto Chicken Pasta from PaleOMG (pictured above) was well received! We made two (2) packs of chicken tenderloins, and it lasted us for a dinner and 1.5 lunches. The pesto/artichoke mixture takes a few minute to put together, and the spaghetti squash takes about 20-30 minutes to cook but beyond that … a pretty easy dinner to put together. Give it a shot.
