Another staple in our (and by ‘our’ I mean ‘Julie’s’) repertoire is PaleOMG’s Plantain Mango Beef. A little chopping, a little dicing, a few spices, throw it in a pot, and you have a meal that is both nutritious and delicious … and can provide lots of leftovers for lunch the next day.
